On October 14th, 2003 we pulled our first batch of coffee from our 10# roaster in a small building on our homestead. The firstyear we roasted and experimented with 2,000 pounds of coffee. That year we were able to hone our basic skills and develop our 'Independent' style of deep-roasting which pays respect to old school roasting methods and traditions.
We joke about giving away 1,800 pounds of experimental coffees to family, friends and anyone who would try our coffees and we drank the rest. (It's actually the truth!)
Independence has been truly fortunate and blessed in the area of growth. In 2010 we will roast over 150,000 pounds of high grown Arabica coffees from sixteen different producing countries for our customers who range from individuals ordering from our website to large grocery markets such as H.E.B.

Our roastery is very small by most standards. However, this allows for the highest quality controls and small batches of exceptional coffee that tastes great, even to the seasoned coffee drinker.
Roast Consistency: Independence has only two roasters on staff One is our original roaster. The other has been trained by our original roaster in all facets of the roasting and blending process which makes our coffees 'OUR COFFEES'. This allows us to blend and roast each batch of coffee the same way, every time. When a customer finds a favorite roast, it will embody the same roast characteristics each time.
Profile Roasting: While others may roast in very large batches with not a lot of variance in timing requirements, the 'Independence Roast' uses time and temperature to help 'guide' each roast through several stages. We feel that the increased time commitment is well worth producing a coffee that is 'deep' roasted and one that produces a cup that truly enhances one's coffee experience.

Freshness: Our coffees are packaged within minutes of leaving our roaster. Many times our coffees are still 'warm' when we hand-package them. Our commitment to freshness and tight distribution standards has even allowed us to deliver our coffees to bed and breakfasts, gourmet markets and grocery markets the same day they are roasted. "In fact, if you can find a fresher coffee, pick a bag up for us as well!"

We give to local organizations within our community. Our involvement doesn't stop with donations to good local causes. It includes a comprehensive plan to better our local community while establishing a footprint in the national and global community sectors through our GoTexan, Fair Trade and Whole Trade Certifications. As we grow, so will our focus on giving back to those in need.
